I am purchasing this system for our school district, but need to purchase an additional speaker as the space it is to be used will be large. Can you recommend a compatible speaker to use in conjunction with this system to help us extend the sound? Or can I purchase any bluetooth enabled speaker to use?

This speaker is a stand alone system there is no option for expansion

I just bought the PSBT125A but I don't understand how to get the remote control to work. Also, there are no instructions in the user manual that actually tell you HOW to use the speaker and all its features. Where can I find better instructions?

The button on the back below the LCD screen that has arrows pointing in 2 directions is the mode button. 
You can press it to choose FM radio, Bluetooth or USB/SD functions also a 3.5mm AUX function
For Bluetooth once you have chosen the mode it is ready to pair with any Bluetooth device you have and play all the music in your phones or Tablet
The microphone just plug in a wired microphone and it is very straight forward you can control the knobs using the Mic volume Echo BASS and Treble as well the master volume
